Amsterdam Reypenaer Cheese Tasting

Prior to the start of our Tulips & Beer River Cruise we enjoyed a cheese tasting at Reypenaer in Amsterdam.  Reypenaer does not make the cheese but uses their "caves" to age the cheeses to perfection.   We learned about how the different cheeses change with age.   The aging process changes the texture, color, aroma and taste.   They paired the cheeses with wines.  They older the cheese the more pungent they became.  My favorite was the Reypenaer XO reserve paired with port wine.  They have a nice shop that you can purchase their cheeses or my favorite the guillotine style cheese slicer.  Be sure to sign up in advance for their cheese tasting!
